1 1/2 lbs ground Australian lamb
1/2 tsp ground all-spice
1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 C, plus extra for serving, chopped pistachio nuts
1 small grated onion
2 cloves chopped garlic
1 C finely chopped flat-leaf parsley leaves
1/2 C finely chopped mint leaves
Flat bread, hummus and salad to serve
To prep: Place all of the ingredients into a large mixing bowl and season with salt and pepper. Mix to combine and form into 12 long patties. Place on a tray, cover and refrigerate for 1 hour.
To cook: Preheat a chargrill to moderately high. Cook for 8 minutes or until browned on all sides and cooked through.
To serve: Sprinkle with some chopped pistachios and serve with flat bread, hummus and salad.
